yogHurT SAUCE oR 'tzatziki'
This is a very commonly used sauce in Greek dishes as much as in Turkish dishes and it's name is the original name that the Greeks gave it tzatziki. It's a sauce with multiple uses; one of the best known uses of tzatziki is as an accompaniment for kebabs or Turkish sandwiches.
Ingredients: (4 people)
½ litre of yoghur t
2 cloves of garlic
2 teaspoons of mint leaves (fresh or dried)
2 spoonfuls of extra virgin olive oil
Salt and pepper
Peel the cucumber and the garlic cloves and chop them both very finely but separately. Sprinkle a little salt over the cucumber and put it in a sieve to drain the water that it loses.
Next, beat the yoghurt and add the cucumber, the garlic, the olive oil, the salt, a pinch of pepper and the mint leaves. Beat everything together until you are left with a cream. Finally, put the sauce in a covered container and leave it in the fridge for at least two hours before serving.
Yoghurt sauce or tzatziki made with cucumber and olive oil, ideal for meats and salads.
