Shepherd's soup Sopa a lo pastor


Ingredients for 4 people: 

 - Olive oil or lard.

 - Garlic cloves.

 - Fat from serrano ham from Teruel.

 - Bread



Put the olive oil or lard in a frying pan.

Add garlic to taste, and the fat from a serrano ham, finely chopped, and cook them well.

Cut the bread into small thin slices, put them in the frying pan and fry them until they absorb the oil making sure that they are well toasted.

Add a large amount of water to the pan and let it simmer until the water evaporates and you are left with a thick soup or paste, which is best eaten hot. 

If there is any left over, it can be reheated and actually tastes even better.
