Pinenut biscuits Tortitas de piñones


Pinenut cookies are typical of the Argelia region.


  • 500 grams of sugar
  • 150 grams of flour
  • Small cup of extra virgin olive oil
  • 2 small cups of water
  • Salt
  • Honey
  • Pinenuts
  • Extra virgin olive oil for frying

Make a well with the flour in a mixing bowl, put the sugar, the olive oil and a pinch of salt.  And the water little by little and work the mixture but without kneading it too much. Leave the dough to rest for half an hour. Roll the dough with a rolling pin to a thickness of about 1 centimetre and cut out biscuits with pastry cutters of about 5 centimetres in diameter.

Heat the olive oil in a frying pan and fry the biscuits. When they are a nice golden colour, remove them from the pan and drain them of any excess oil with kitchen paper. Place them on a plate and drizzle them with honey and sprinkle them with pinenuts.
