SYSTEM
Used in antiquity to
extract olive oil without using any mechanical device. In recent times
this procedure is applied to the olive paste obtained in pre-grinding or
crushing.
The system consisted in inserting the olives, most likely of a high
degree of maturity, into a sturdy cloth sack which was then tightly
twisted by the means of some stakes or adapted wooden handles at both
ends.
It was used in very
remote times in cultures with emerging technical training. Relics and
paintings can be found relating to this form of olive oil production in
an Egyptian tomb from the dynasty. 2,500 to 2,300 BC.
