Turkey with mandarins Pavo con mandarinas y aceite oliva

PAVO CON MANDARINAS Y ACEITE DE OLIVA DEL BAJO ARAGÓN  

  

 Ingredients for 4 people:

 - 1,5 kg. of turkey.

 - 3 mandarins.

 - 500 g. of mushrooms.

 - 8 spoonfuls of extra virgin olive oil from Lower Aragón .

 - 4 sprigs of tarragon

 - Coarse cooking salt.


 

Preparation:


Pre-heat the oven to 210ºC. Cut the turkey into large pieces, season it, and put it in a ceramic oven dish.

Wash the mandarins and without peeling them cut them into segments.

Add them to the turkey and mix. Drizzle with extra virgin olive oil from Lower Aragón.

Put the the dish into the oven and cook for 35 minutes.

Meanwhile, wash the mushrooms and cut them if they are quite big.

Take the dish out of the oven, and add the mushrooms to the dish. turn the meat every now and then too so that it cooks evenly.

Leave the dish in the oven for another 35 minutes.

Remove the dish from the oven and sprinkle with some coarse salt.

Add the finely chopped tarragon and serve hot.
