Get rid of the tips, stem and the outer
(tougher) leaves of the artichokes.
Rub the artichoke hearts with lemon and put them
in boiling water with salt and another dash of lemon. After 10 minutes,
Artichokes with serrano ham.
Put 4 spoonfuls of olive oil from Lower
Aragón in a deep frying pan and grate on top the onion and the carrot,
adding also the crushed or very finely chopped garlic cloves.
When everything has fried
for a few minutes, add the Teruel ham, diced, and stir. Finally, add the
artichokes, the salt, half a glass of wine and half a glass of water.
Let it all cook on a low heat for 15
minutes and serve hot.
