Pesto sauce Salsa pesto

PESTO sauce  

Pesto is a sauce with italian origin whose essential ingredients are virgin oive oil, garlic, cheese, nuts and herbs. In this case we are going to use pinenuts and basil. This mix is ideal to accompany all types of pasta and some vegetable dishes too.


  • 50 g. of leaves of fresh basil (without stalks)

  • 3 soup spoons of pinenuts

  • 2 cloves of garlic

  • 1 ½ litre of olive oil (cup and a half)

  • 3 soup spoons of grated parmesan cheese

  • Coarse salt



Peel the garlic cloves and crush them in a mortar with a pinch of salt. Next, add the pinenuts in small amounts and crush them thoroughly. Add the basil leaves and continue crushing everything until you have a fine paste.

Next, add the olive oil slowly, in a thin trickle, whilst stirring constantly with the pestle and throw in a spoonful of grated parmesan cheese every now and then to emulsify the sauce until it's smooth and even.

If you're going to serve the pesto with pasta, is advisable to keep a little bit of the water after cooking the pasta and add it to the sauce to thin it out slightly, stirring in the mortar constantly to dilute it a little.
