mojo picón sauce  

This is a typical sauce of the Canary Islands. Its an ideal sauce fro dressing meat dishes or the typical "papas arrugadas" a potato dish.  


  • 1 head of garlic

  • 1 soup spoon of cumin

  • 1 bay leaf

  • 3 cayenne peppers

  • ¼ litre of olive oil

  • Vinegar and salt.



 Peel the garlic cloves and crush them in a mortar with the cumin, the bay leaf and the cayenne peppers. Add the olive oil little by little in a fine trickle so that it binds well with the other ingredients. Then add a little salt and a dash of vinegar. If you want to thicken the sauce, crush a little bit of bread in the mortar and add it to the sauce.
