Enchiladas with Teruel ham Enchiladas con jamón serrano de Teruel

ENCHILADAS WITH SERRANO HAM FROM TERUEL   

  

 Ingredients for 4 people:

 - 12 flour or corn tortillas

 - 12 slices of serrano ham from Teruel.

 - 12 slices of cheese from Maestrazgo.

 - Extra virgin olive oil from Lower Aragón, to fry.

 - ¼ k. of green tomatoes.

 - 1 medium tomato.

 - 1 small onion.

 - 1 clove of garlic.

 
- 10 green chillies.

 
- ¼ sour cream.

 
- 1 teaspoon of table salt (grain).

 
- Chicken stock powder to taste.

 

Preparation:


The tortillas are used to make tacos with the Teruel ham and the cheese from Maestrazgo (it's necessary to make sure that the tortillas don't break so use cocktail sticks if needs be). Fry the tacos in virgin olive oil from Lower Aragón until the cheese melts.

For the sauce, use the green tomatoes, the medium tomato and the chillies, which we boil before blending them together with the onion, garlic and the salt. 

The made sauce is poured into a frying pan with olive oil from Lower Aragón to mix it with the chicken stock powder. When the mixture has acquired a brownish-green tone, turn down the heat to add the sour cream and allow it to simmer for 3 minutes.

For the presentation, place the fried tacos on a plate and smother them in the sauce. You can garnish with lettuce and coriander.

As an accompaniment you can serve cold soft drinks or good quality wine from the cellars of Lower Aragón.
