of onion soup with goats cheese
Ingredients for
4 people:
-
4 large onions.
- ½ baguette (toasted).
- 1 ½ litres of chicken stock. -
200 g. of goats cheese. - 3
sheets of pastry. - Extra
virgin olive oil from Lower Aragón.
- Salt.

Delicious
cream of onion soup with fried goats cheese.
Preparation:
Peel and chop the onions into
large pieces and put them in a pan with extra virgin olive oil from
Lower Aragón and a pinch of salt to fry.
Once the onion is golden,
chop the bread and add it to the pan. Next, add the stock and the salt
and leave to cook for 15 minutes. Once cooked, pour into a blender,
blend and put the soup into a Tureen (serving bowl).
Cut the sheets of pastry
into pieces and use them to wrap each piece of goats cheese, so you have
small goats cheese parcels and fry them. When you remove them from the
pan, put them on a plate with kitchen paper to soak up any excess oil.
Place them in a bowl.
Serve the cream of onion soup and
put a goats cheese parcel on each plate.
