Cod with potatoes Bacalao con patatas y aceite de oliva

COD WITH POTATOES

  

 Ingredients for 4 people: 

 - 300 g. of cod.

 - 1 kg. sliced potatoes.

 - 1 pepper.

 - 1 tomato.

 - Half an onion.

 - 2 garlic cloves.

 - Flour.

 - Virgin olive oil from Lower Aragón.

 

Preparation:


Coat the potato slices in egg and flour and fry them in a frying pan with plenty of olive oil from Lower Aragón, as you remove them from the pan, put them on a plate with kitchen paper in order to soak up any excess oil. 

Re-use the olive oil to fry the cod, cut into small pieces, and set them aside in a large saucepan.

In another frying pan, with a little olive oil, make a stir-fry mix with the pepper, half an onion, the tomato and the garlic cloves. 

Pour the stir-fry mix into the pan with the cod, add water and bring to the boil. Leave everything to simmer for 20 minutes.

Then, add the potatoes and allow them to cook.
