Scrambled eggs with cod and Teruel ham Revuelto de bacalao con base de jamón de Teruel

SCRAMBLED EGGS WITH COD AND TERUEL HAM

  

 Ingredients for 4 people: 
 

 - 50 g of unsalted cod.

 - 2 finely chopped onions.

 - 1 green pepper in strips.

 - Chopped parsley.

 - 4 beaten eggs.

 - 100 g of serrano ham in thin slices.

 - 10 ml. of extra virgin olive oil.

 - Salt.

 

 

Preparation:

 

Put the olive oil in a frying pan on a very low heat and add the onions and the green pepper; brown them slowly with a lid, stirring frequently with a wooden spoon or something similar.

Then add the cod in pieces, the beaten eggs (lightly seasoned) and the chopped parsley; cook everything on a very low heat, stirring constantly.

Place the scrambled eggs on two plates, half the mixture on each plate, and then add the thin slices of Teruel ham.
