Tomato and goats cheese salad
Ingredients
for 4 people:

4 ripe tomatoes.
- 4 spoons of sugar.
- 1 bay leaf.
- 4 peeled cloves of garlic.
- 1 fistful of lettuce .
- 1 spoonful of wine vinager.
- 1 sprig of thyme.
- 4 spoonfuls of extra virgin olive
oil.
- Salt.
- Freshly ground black pepper.
- 8 slices of goats cheese from
Lower Aragón

Tasty salad with goats cheese.
Preparation:
Peel the tomatoes, halve
them and empty them of their seeds and water. In a bowl mix the shredded
thyme, chopped bay leaf, sugar, whole garlic cloves, and extra virgin
olive oil. Mix well and add tomato halves. Heat the oven to 80 degrees.
Place tomatoes in a baking dish and cook for 4 or 5 hours.
Cut the slices of artisan
goat cheese, place them in a heat proof tray and grill them in the oven.
When melted, remove.
Put the lettuce, washed
and chopped, in a bowl. Make a vinagrette
with the extra virgin olive oil, the vinager, salt and the pepper; beat
well and set aside. When the tomatoes are cooked, put the salad together
by placing the lettuce in a bowl, the tomatoes, the melted cheese and
then to finish, sprinkle the vinagrette evenly over everything.
