Potatoes
filled with meat and cheese
Ingredients for 4 people:
- 1 kg.
of potatoes.
- 200 g. of minced meat.
- 100 g. of cheese from Aragón.
- 2 red peppers.
- 1 green pepper.
- 1 onion.
- 2 cloves of garlic.
- 3 eggs.
- Flour.
- Grated bread/breadcrumbs.
- Water.
- Extra virgin olive oil from
Lower Aragón.
- Salt.
- Parsley.

Delicious
stuffed potatoes.
Preparation:
Firstly, chop the
cloves of garlic very finely and fry them lightly in a frying pan with a
little extra virgin olive oil from Lower Aragón. Next, finely chop the
onion and add it to the frying pan to golden.
Then, chop a little
parsley and sprinkle it over the minced meat to season it slightly, then
add the meat to the frying pan also and sauté the meat briefly.
once the meat is fried, remove it from the pan.
Next, wash the peppers and
cut them into matchsticks and put them into a frying pan with olive oil.
Peel the potatoes and cut them into pieces and put them into a pressure
cooker for 5 minutes with some water and a pinch of salt. Once the
potatoes are cooked, drain the water and mash the potatoes. Beat an egg,
sprinkle it with parsley and add it to the mashed potato. Mix together
throroughly.
Make balls of mashed
potato and fill them with a little bit of the minced meat and a piece of
cheese. Then roll the potato balls in flour, beaten egg and then finally
in the grated bread. Make sure they're are fully covered in breadcrumbs.
Then fry them in a frying pan with plenty of extra virgin olive oil from
Lower Aragón.
When the potato balls and
golden brown, take them out of the frying pan and set them on a plate
lined with absorbant kitchen papaer to saok up any excess oil.
When serving, we can place
the two fried peppers in the middle of the serving plate with the potato
balls place around them.
