Cheese fritters Buñuelos de queso del bajo Aragón

CHEESE FRITTERS

  

 Ingredients for 4 people: 

 - 200 g. of flour.

 - 150 g. of cheese from Lower Aragón.

 - 2 spoonfuls of sugar.

 - 2 egg whites.

 - 1 glass of cava.

 - 1 teaspoon of yeast powder.

 - 1 pinch of salt.

- 1 pinch of cinnamon.

 - Olive oil from Lower Aragón.

 - Mint leaves.

- For the syrup:
 - ½ glass of sugar
 - ½ glass of water
 - 1 cinnamon stick
 - raspberries, blackberries and currants

Preparation:


In a bowl, mix the sugar, the cinnamon, the salt and the yeast. Sift in the flour and mix well.

Pour in the glass of cava little by little, stirring constantly

Leave the batter to ferment for 15 minutes.

Then, with the help of an electric whisk, beat the egg whites until stiff, grate the cheese from Lower Aragón and them to the bowl with the rest of the ingredients. Mix well.

Fry small portions of the batter in a frying pan, with plenty of hot olive oil.

Remove them form the pan and set them on a plate covered in absorbant kitchen towel to drain them of any excess oil.

For the syrup, put the water, the sugar and the cinnamon stick in a saucepan. Bring to the boil and leave to simmer.

Add 2 raspberries, 2 blackberries and a cluster of currants and leave to cook for 15 minutes.

Serve the fritters and sprinkle them with the syrup.
