cheese and potato CROQUETteS
Ingredients for 4 people:
- 250 g. of cured artisan cheese.
- 800 g. of potatoes.
- 50 g. of butter.
- 4 eggs.
- Bread (grated).
- Extra virgin olive oil from Lower Aragón.
Delicious croquettes with bits of ham from Teruel.
Preparation:Cook the potatoes in salted water. Once cooked, peel them and mash them to leave a puree. Mix the mashed potatoes with grated artisan cheese, the yolks of three eggs and the butter. Beat the three egg whites until stiff and add to the mix.
Beat an egg in one bowl and put the breadcrumbs/grated bread in a different bowl.
Once the potato and cheese dough has cooled down, take small portions of it and shape them (see photo above). Then dip them in the beaten egg and after dip them ini the bowl of breadcrumbs to give it an even coating.
Fry them in a frying pan with plenty of very hot extra virgin olive oil until they are golden brown.
