Cauliflower
cheese
Ingredients for 4 people:
- 1 cauliflower
- 200 g. of lima beans.
- 16 rashers of bacon.
- 15 g. of flour.
- 25 g. of butter.
- 200 ml. white wine
from Maestrazgo.
- 150 g. artisan cheese
from Teruel.
- 2 spoons of cream.
- Water
- Extra virgin olive
oil from Lower Aragón.
- Salt.
- Black pepper.

Baked
cauliflower cheese made with white wine and artisan cheese from Lower
Aragón.
Preparation:
Firstly, remove the green
leaves from the cauliflower, separate the florets with a knife, and cook
them in water with a little salt.
When they are cooked, drain them
and put them in an oven dish.
To make the sauce, put the
butter in a saucepan on a low heat to melt and add the flour. Then add
the white wine little by little, stirring constantly so that you don't
get any lumps and then add the cheese (grated) and the cream, keep it on
the heat until the cheese has melted.
Once you have made the
sauce, add it to the oven dish with the cauliflower and put it in the
oven until it goes golden.
While the cauliflower is in the oven, put 2 or 3 spoonfuls of extra virgin
olive oil in a frying pan with the rashers of bacon and cook them until
they become crispy. Then place them around the cauliflower.
Remove the majority of the
oil from the frying pan and then use what remains to fry the lima beans
lightly and put them on top of the cauliflower.
