Breaded ham Empanada de lomo con jamón serrano

PORK PASTIES WITH SERRANO HAM FROM TERUEL   

  

 Ingredients: 

For the pastry:
- 1/2 Kg of flour. 100 g. of pig lard
- 1 egg. 100 ml half water/half white wine
- Pinch of salt
- 100 g baker's yeast
Filling:
- 200 g loin of pork, diced.
- 1 finely chopped onion
- 1 green pepper 1/2 red pepper chopped
- 150 g. serrano ham from Teruel, chopped
- 3 spoonfuls tomato sauce. - Salt and pepper
- 6 Spoonfuls of olive oil from Lower Aragón
- 1 Spoonful of white wine
- 1 beaten egg with 1 spoonful of milk (to glaze the outside)

 

Preparation:

Put the flour in a bowl and make a hole in the middle of the bowl by pushine the flour to the sides, put the water and white wine mix in the hole in the middle and dissolve the yeast in it. Add the beaten egg and the lard and knead together.  

When it is mixed throroughly, make it into a ball and let it stand in a cool place for an hour or until it rises a little.

Meanwhile, cook the onion and peppers in the olive oil.

When they're cooked, add the pork and fry it, stirring it every now and then and add the ham, salt, pepper, wine and tomato sauce, mixing everything together.

Next, divide the pastry dough in two and roll it with a rolling pin.

Cover a baking tray with one of the sheets of pastry, and spread the filling on top of it.

Next, cover it with the other sheet of pastry and seal the edges using a fork and a little bit of water.

Glaze the top of the pie with the beaten egg and milk mix. 

To finish, place it in the oven at 150ºC or medium oven for approximately one hour or until you can see that it is cooked and golden on top. 

When you remove it from the oven, leave it to stand for a while, it is better warm than too hot.  

The filling can be made with whatever you want, some variations can include tuna, spinach, sardines or whatever you fancy!
