Breaded chicken Pollo empanado

BREADED CHICKEN FRIED IN OLIVE OIL FROM LOWER ARAGÓN

  

 Ingredients for 4 people:

 

 - 4 chicken breasts, cut into fillets.

 - 2 garlic cloves.

 - Fresh parsley.

 - 1 egg.

 - Extra virgin olive oil from Lower Aragón.

 - Bread crumbs.

 

Preparation:

 

Crush the garlic and the parsley together with a pestle and mortar.

Beat the egg and prepare the grated bread/bread crumbs on a plate.

Spread the garlic and parsley mixture over the chicken breasts, dip them in the beaten egg and coat them in bread crumbs.

Next, fry them in a frying pan with hot extra virgin olive oil. When they are agolden brown, remove them from the pan and place them on a plate lined with kitchen paper to absorb any excess oil.
