steak
with brussel sprouts
Ingredients
for 4 people:
-5
steaks of 100 to 150 g each.
- Extra virgin olive oil from Lower Aragón.
-5 eggs.
-600 g of Brussel
sprouts.

Beef
steak accompanied by Brussel srpouts.
Preparation:
Put some water
to boil in a saucepan. Remove the outer leaves from the brussel sprouts
but don't remove the stalk, and wash them. When the water boils, add
some salt and the brussels; leave them to cook for 10 minutes. When they
are cooked, drain them in a colander and cool them by running the
colander under cold water and then leave them to drain.
Put virgin olive oil in a saucepan and
when it's hot, add the brussel sprouts and leave them to cook for
approximately 10 minutes until they are golden. Put the plate that
you're going to use to serve them in into the oven so that it's warm.
Put 6 or 7 spoonfuls of olive oil in a
frying pan to heat, when the oil is hot fry the eggs; remove them with a
fish slice or something which allows the oil to drain. Place the cooked
eggs on the plate that you have in the oven.
After cooking the eggs, use the frying pan
to fry the steak. Leave it to cook for a couple of minutes on each side
and season with salt ad pepper to taste.
Take the plate out of the oven and place a
steak underneath each egg, distribute the brussel sprouts around the
steaks and serve hot.
