aubergine
surprise with artisan cheese
Ingredients for 4 people:
- 3 aubergines.
- 2 tomatoes.
- 1 onion
- 2 cloves of garlic.
- 2 potatoes
- 150 g. artisan cheese from Teruel
- 1 cup of tomato sauce.
- Water.
- Extra virign olive oil from
Lower Aragón.
- Salt.
- Basil.
- Parsley.

Exquisite aubergine surprise.
Preparation:
Peel and chop the potatoes
and put them to cook in a saucepan with water and a pinch of salt.
While we cook the
potatoes, wash the aubergines, cut 2 of them into slices and salt them.
Add olive oil to frying pan and fry the slices of aubergine until they
are moldable.
Finely chop the cloves of
garlic and put the slices into the frying pan with olive oil to brown
slightly. Then, finely chop the onion and add to the frying pan,
browning it slightly.
Next, addthe other
aubergine and the tomato (peeled and diced). Sauté the vegetables for 5
minutes.
Finely chop the basil
leaves and add them to the tomato sauce, and heat it up slowly in a
sacuepan.
To make the 'surprises'
use a flat fish slice. Cover the fish slice with the slices of
aubergine, letting the edges fall over the sides. Put two spoonfuls of
the fried vegetable mix in the middle and put a slice of artisan cheese
and a slice of potato on top.
When you have all the
ingredients in place, close the 'surprise' with the edges of the
aubergine. Repeat this method until you have finished all of the
aubergine slices.
To accompany the
surprises, use the tomato sauce and some grated artisan cheese to
sprinkle on top.
