AUBERGINES WITH CHEESE FROM ARAGÓN
Ingredients for 4 people:
- 3
aubergines.
- 75 g cheese from Aragón.
- Homemade tomato sauce.
- Potatoes.
- Flour.
- Extra virgin olive oil.
- Salt.
- Pepper.

succulent aubergines with artisan cheese from Aragón.
Preparation:
First
of all, wash the aubergines, dry them, cut them into slices and salt
them. Leave them to drain in a colander until they lose their bitter
juice they contain.
Next, dip the aubergine slices in flour, shake off any excess and fry
them in hot olive oil.
Then cut the potatoes into slices, dip them in flour
too and fry them like we did the aubergines.
When
the potatoes and the aubergines are fried, put them on a plate covered
with kitchen paper so that it soaks up any excess oil.
Place the slices of aubergine in layers in an
oven dish alternating them with layers of tomato sauce, cheese and the
potatoes.
Sprinkle grated cheese and falkes of butter over the top. Finally, put
it in the oven and grill until the cheese goes golden and crispy.
